Pineapple, Avo & Basil Salad – This is as easy as cutting the pineapple into bite sized pieces, tearing basil leaves, and mix in the avocado! That’s it. Super easy and refreshing on a hot day – the perfect accompaniment to a white fish dish, or add some big king prawns to the salad!

Healthy Xmas TreeChristmas Chickpea Salad – This salad is a beauty for keeping with the Christmas colors – and it is packed with minerals and vitamins! Drain a big can of organic chickpeas, finely chop a handful of parsley, and finely dice into cubes 3-4 tomatoes, 1 cucumber, and 1 medium red and green capsicum. Mix them all together and add dressing: Lemon juice, garlic (minced), and olive oil. Yummo!
